I found this original recipe in a sale book at Sam’s Club and I have adjusted it here and there. It was great on a cold day!

Ingredients:
- 2 Boneless Skinless Chicken Breasts (thawed)
- 2 cups of Sweet Corn
- 2 tbsp Ranch Seasoning Mix
- 1 can tomatoes
- 1 can black beans, drained and rinsed
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tbsp onion powder
- 1 8-oz package cream cheese
Cooking Instructions:
- Thaw chicken and place in a slow cooker.
- Top with the corn, tomatoes and black beans.
- Add the ranch seasoning mix, cumin, chili powder and onion powder. Stir.
- Add softened cream cheese and cook on low for 6-8 hours, stirring occasionally to blend in the cheese.
- Using two forks, shred the chicken into smaller pieces, top with shredded cheese or serve with tortilla chips.
