Slow Cooker Southwest Chicken Chili, by Lisa Fricker

I found this original recipe in a sale book at Sam’s Club and I have adjusted it here and there. It was great on a cold day!

Ingredients:

  • 2 Boneless Skinless Chicken Breasts (thawed)
  • 2 cups of Sweet Corn
  • 2 tbsp Ranch Seasoning Mix
  • 1 can tomatoes
  • 1 can black beans, drained and rinsed
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp onion powder
  • 1 8-oz package cream cheese

Cooking Instructions:

  1. Thaw chicken and place in a slow cooker.
  2. Top with the corn, tomatoes and black beans.
  3. Add the ranch seasoning mix, cumin, chili powder and onion powder. Stir.
  4. Add softened cream cheese and cook on low for 6-8 hours, stirring occasionally to blend in the cheese.
  5. Using two forks, shred the chicken into smaller pieces, top with shredded cheese or serve with tortilla chips.
