Hungarian Green Bean Soup – in the Kitchen with Jenn

Ingredients
1 Tbsp butter
1 small onion, finely chopped
1 lb fresh green beans, trimmed
2 cups vegetable broth
1 Tbsp paprika
Salt to taste
Pepper to taste
1/2 cup sour cream
1/2 cup milk
1 Tbsp corn starch

    ⁃    In a medium size pot, melt butter and cook onion in medium heat until translucent
    ⁃    Cut green beans into 1 inch pieces and add to the pot with broth, paprika, salt and pepper
    ⁃    Bring to a boil, reduce heat and cover
    ⁃    Simmer for 20-30 minutes or until green beans are tender
    ⁃    While green beans are cooking, whisk together sour cream, milk and corn starch
    ⁃    Stir in sour cream mixture and bring soup back to a boil
    ⁃    Cook for a minute or two until soup is desired thickness
