Weekend Palatschinken with the Grandchildren, by Lisa Fricker

On the weekend of October 4-5 we had our grandchildren and son Michael staying with us for the weekend since there were a few Schuhplattler jobs up in our area.

A few weeks before,  Karina visited and we invited both grandmoms  and Werner and Karin over for the special dinner of  Palatschinken or crepes or as some people call them pancakes!

In the Hungarian cookbook I use for this recipe they are called Palacsinta.  

Since Michael was not able to come in September, I wanted to make them for him.  Also for Michael K. and Penny.   I found a recipe called Easy Vegan Crepes.  This is because both the young children are allergic to milk and eggs.   This recipe came out wonderfully and we used the non-dairy milk that they drink.

Michael K. and Penny both helped me mix the dough and cook their Palacsinta.   Penny ate heartily and Michael K. was not too sure, I am not sure if he tried it.   I have wanted to have this experience with them for a while and I am glad we were able to do it that day!

As for Michael and Werner they enjoyed the regular ones, they even got a couple,  “hot off the pan” as Werner likes to eat them!

Editor’s Note: These thin pancakes are most popularly know from the French but cross ethnic and geographic boundaries. The 75th Anniversary Edition of Joy of Cooking contains nine recipes for crepes, three recipes for blintzes, and one recipe for Viennese or Austrian Crepes (Palatschinken).

There are eight recipes for Palatschinken in our club cookbook, Mahlzeit. All of these are included in the main dishes section of the book. Most have a subtitle describing this dish as a Crepe, one with the alternate name “Pletchinka.” A few call out the English word pancake, with Emily Fricker noting “My family called these pancakes.”

Clearly these are a favorite of the German-Hungarian People. Find your favorite recipe and make these for your family today.
