Grumbiere un Knoedle, by Lisa & Werner Fricker Jr.

EDITORโ€™S NOTE:ย As it is the Lent season I asked our members to share their favorite Lenten meatless meal. Almost as soon as the request went out I received an email with this recipe from my dad. This was a classic in our home growing up. Even though this simple meal was meant as an option for abstinence in Lent, we all really enjoyed it. Werner & Lisa did on Ash Wednesday, but maybe this could be your dinner tonight or next Friday.


Potatoesย  ย 

  • Peelย (six) cut in cubes and cook until soft

Knoedle (nockerl, dumpling)

  • 3 cups flour
  • 1 cup cold water
  • 2 eggs
  • ยฝ teaspoon salt

Measure flour into a bowl, add water, eggs and ยฝ teaspoon salt.ย 

Mix well using a wooden spoon until dough forms bubbles.

Cover dough in a bowl with a towel to prevent it from drying out and set aside.

Fill a pot with 3 quarts of water and 1 ยฝ tablespoons of salt and bring to boil.

Using a teaspoon scrape dough out of the bowl and drop into boiling water.( ยฝ size of spoon makes a nice size dumpling)

Cook for about 10 minutes or until dumplings rise to the top.

Remove and place in a bowl to keep warm.

Bread Cubes

Cut up a few slices of white bread into small cubes and fry in butter or oil, until crispy and golden brown.

Finish

Combine the potatoes, knoedle, and Bread cubes into a bowl and mix it together.
