Mrs. Galgon’s Red Cabbage – in the Kitchen with Jenn

Ingredients
1 red cabbage, chopped (about 4lbs)
1 onion, chopped
2 apples, peeled and chopped
1 potato, peeled and grated
1/2c red wine vinegar
1c red wine
1/2c sugar
1 Tbsp cinnamon
1 tsp salt
pepper to taste
2 Tbsp butter

Directions
    ⁃    Add butter to a large pot and sauté onion and apples on medium heat until golden.
    ⁃    Add cabbage, vinegar, red wine, sugar, salt, pepper and cinnamon.
    ⁃    Once cabbage begins to wilt, turn heat to low and cook for 1 to 1 1/2 hours
    ⁃    Stir in grated potato for the last 20 minutes of cooking.
    ⁃    Cook until thickened
